Glass of Iced Coffee - Frappe

Frappe is an Iced Coffee, made years before big coffee shops like Starbucks or Mcdonalds were making iced coffee.

The Greeks love their coffee boost and this is a great drink to have in the summer, when the traditional Greek coffee is too hot for the weather.

Greeks will have this in a tall glass with a straw and will always take their time, slowly sipping their Frappe, never rushing it.

The Greeks used to use evaporated milk in their Iced Cafe recipe. Cows' milk was not always readily available and this was more convenient, being in a tin.

It also makes it creamy so if you like that flavour do use it, otherwise you can use normal milk in the recipes.

The Greeks have been using a Frappe maker - similar to a shaker for years and it produces a quality Frappe. You could use a blender to get a thicker drink.

Coffee Beans

To make 1 Frappe

Ingredients

2 heaped teaspoons good quality instant coffee - Moccona, Nescafe
1-2 teaspoons sugar
iced water
ice cubes
milk, or evaporated milk
straw
shaker

Preparation

Put a couple of ice cubes in a tall glass.
In a shaker, add the coffee and sugar and about 1-2 tablespoons of iced water.
Shake vigorously until all is mixed and created a thick froth.
Add a little more water - @ 2-4 tablespoons and shake again until well mixed and thick.
Pour this into the glass.
Add a little water into the shaker and swirl around to use any coffee still in the shaker and pour into the glass.
Pour a little milk into the glass, to your liking.
Top the glass up with iced water until the froth is to the top of the glass, but not overflowing.
Use the straw to stir until just combined.
Do not mix too much, you don't want to lose the froth.
