Fried Fish Recipe Deep Fried Whitebait - Marides
With this fried
fish recipe, which uses whitebait or any small fish, you cook and keep the fish whole.
In Greece, Marides is a delicious meal made from the smallest catch of fish, lightly floured and seasoned and deep fried. The Greeks will eat them whole, they are so small, you won't have any problem with the bones. If you don't like the heads, you can snap them off when you eat them!
Serve the fish as part of a meal, with Greek Salad, chips and tzatziki. They are a great choice as an appetizer or meze, perfect with a glass of Ouzo!
Ingredients
1kg whitebait
120g plain flour
1/2 - 1 tsp paprika
freshly ground salt and black pepper
vegetable oil
lemon wedges, to serve
Preparation
Place the flour, paprika and freshly ground salt and pepper in a plastic sandwich bag. Shake to mix.
Add the whitebait to the bag in batches. Close the bag and shake until the fish is individually coated in the flour mix.
Place the whitebait on a plate and repeat with all the fish.
Either use a deep fat fryer or a deep frying pan and fill with enough oil for the fish to be submerged in the oil. Heat the oil.
Fry the whitebait in batches for a couple of minutes, until the fish is crispy and golden.
Drain on absorbent paper towels to remove any excess oil and serve straight away whilst hot with the lemon wedges.
