Cheese and ham cake is is a great appetizer food to either cut up in slices for finger food at a party or whenever a savoury appetizer is needed. It is also great to make for a light lunch, teamed up with a salad.
Ingredients
1 teacup butter 1 teacup warm milk 3 teacups plain flour 1 teacup grated kefalotiri cheese (or other type of hard cheese) 1/2 teacup ham, finely chopped 1 level teaspoon salt 3 level teaspoons baking powder 5 eggs, separated
Preparation
Place the egg whites in a mixing bowl and beat with an electric mixer until it becomes like a meringue. (soft peaks forming.) Put aside.
In a large mixing bowl, beat the butter until like a cream colour. Then add the egg yolks, one by one, beating in between to mix them into the butter. Beat well after all the egg yolks are added.
Add the warm milk, sieve the flour along with the salt and baking powder. Add the cheese. Mix in well.
Add the meringue and the ham, a bit at a time, and slowly fold into the mixture with a metal spoon only until just mixed in.
When adding the meringue, if there is some liquid in the bottom of the bowl that has separated from the white frothy meringue - do not add this to the mixture as it will give it a rather eggy flavour.
Empty mixture into a well greased baking dish and bake in a pre-heated medium oven - 325-350F (160-180C) for 3/4 - 1 hour, but do check regularly as some ovens can vary widely.
